Cooking/cooling vessels are sized to maximize facility throughput. Uniform control of heating and cooling ensures quality processing. Allpax evaporative cooling technology can achieve temperatures of just above freezing in less than an hour following cooking for the shortest cooking/cooling cycle. Integrated cooling eliminates the need for refrigerators or blast coolers following cooking, which lowers capital investment, reduces footprint, and decreases overall energy consumption.
Orbital doors on the loading and unloading sides of the vessel raise and lower instead of open in and out, which also improves floor-space utilization. The Allpax automated retort loading and unloading system reduces labor and creates a safer, more ergonomic environment. Turnkey integration upstream and downstream of the automated system ensures fast, trouble free start up.
The state-of-the art control system is compliant with FDA guidelines for electronic record keeping. The control system offers multi-level security settings to ensure the integrity of the process.
Vessel insulation contributes to lower temperatures surrounding these units. Stainless-steel exterior cladding is ideal for a food plant’s washdown environment.
